What You Will Do:
The cook is responsible for preparation, proper storage, and the service of quality meals in a buffet-style cafeteria for youth and adult guests. This position is responsible for making meal substitutions for participants with allergy and dietary restrictions on a weekly basis. They are responsible for and assigning daily kitchen cleaning duties.
This position takes place at our campus in Yosemite National Park and includes housing inside the park.
Your primary job will be to:
-Prepare daily meals, according to U.S. Public Health standards, for groups up to seventy-five.
-Label, date and store meal items properly.
-Ensure that adequate nutrition and quantities of food are provided at each meal.
-Work with the Food Service Manager in meal planning based on costs, student allergies, and seasonally available produce.
-Prevent food waste through ordering, FIFO rotation, and quantity of meal preparation per group size.
-Prepare meals that are appropriate and that are enjoyed by our participants based on feedback.
-Work with the Food Service Manager to prepare meals for special events, such as board retreats, board meetings and special events like our Baxter Pancake Breakfast etc.
-Maintain a safe, clean and orderly work environment to meet U.S. Public Health Standards.
-Perform daily, weekly, and monthly cleaning logs.
-Keep daily refrigeration temperature logs, sanitation logs, and rodent capture logs.
-Know ingredients of meal products and make substitutions for individual participants based on allergy and meal restrictions.
-Responsible for and oversees kitchen sanitation and cleanliness.
-Responsible for dishwashing and meal clean-up.
-Take inventory and submit orders to vendors.
-Create vendor orders, receive, inspect, and rotate stock for Yosemite’s meal programs independently.
-Conduct weekly and end of the month inventory for food order placement from our vendor.
-Oversee the kitchen in the Food Service Managers absence.-
-Performs all other duties as assigned by the Food Service Manager.
$19.00/hr starting wage

Who You Are:
-Must be able to work well with other NatureBridge staff, Park Service employees, program participants and visiting public.
-Must have excellent problem solving skills.
-A flexible, positive attitude, excellent judgment and safety consciousness
-Promptness and ability to work independently.
-Current driver’s license and clear driving record required.
-Basic knowledge and experience in preparing a menu for events for groups of up to 75 people.
-Valid ServSafe Management Food Handlers certificate within four months of hire.
-California Food Handlers permit until management certificate is acquired.
-Can perform assigned tasks punctually, with attention to detail and food presentation.
-Must be able to lift 60 pound parcels.
